Because Gluten Free Can Be Delicious!

When I was initially told about changing my lifestyle and diet to be gluten free, it was overwhelming. I didn’t want to cook or bake anymore because I thought of it more as a chore than something I enjoyed. But over the last year, I have learned so much about gluten itself (and where it hides), and how I can substitute my favorite meals as gluten free. 

Cookies have always been my absolute favorite sweet tooth satisfaction. If the cookie monster was real and a female, I probably would be it. I tried a few homemade recipes, box recipes, and even pre-made store bought cookies. Nothing was as good as a good o’l fashioned chocolate cookie.

I began to read various reviews and recommendations on my gluten free and Celiac Disease support groups and stumbled upon suggestions for Pillsbury boxed treats! It was a game changer. In this post, I laid out the recipe I follow and add to make it my own. I wasn’t initially crazy about the cookies coming from a box, but with gluten free baking, there are a few differences compared to regular baking. One major difference is the binding agent. Another being the texture if not measured correctly. So for now, this recipe is more that perfect for me! 

I hope you all enjoy! 

Step 1. Gather all of your ingredients

I generally use Mott’s applesauce (organic if possible) but my local grocery store was out. I choose the unsweetened version because the cookies are sweet enough, so I don’t want them to be too sweet to eat. I use applesauce instead of butter because putting 1/2 cup of butter in a recipe kind of grosses me out- plus it is a healthy alternative and gives a lovely, light apple flavor. 

I added oats to my cookie recipe because it gives a great texture, adds fiber, and of course, a delicious taste. For each recipe, I add 1/2 cup gluten free oats. Bob’s Red Mill rolled oats are my favorite.

Step 2. Measure out all ingredients.

I follow the box suggestions, but I do add an extra tablespoon of water. And of course, substitute the butter for applesauce. 

Step 3. Combine and mix all ingredients.

I absolutely love The Pioneer Woman’s baking and cooking gadgets. They are sturdy, functional, and gorgeous tools to use for baking and cooking! 

Step 4. Separate cookies onto lightly sprayed cookie sheet.

I use a 1 1/2 tablespoon scoop, but I don’t fill it all the way. The cookies don’t spread too much when baking, so I put four in each row (or column depending on how you look at it) until I run out. you can make them as big or small but baking times will vary.

Step 5. Wait patiently for 15 minutes while they bake!

The box doesn’t call for this long, but I have found it they don’t bake for at least 15 minutes, you get raw cookies that just fall apart.

Step 6. Take cookies out and let them cool. Then transfer them to a beautiful plate; Pioneer Woman again!

Step 7. ENJOY!

My Recipe:

  • 1 large egg
  • 1/2  cup applesauce
  • 1/2 cup oats
  • 2 tablespoons water
  • 1 box Pillsbury chocolate cookie mix
  • Heat oven to 375 degrees and bake for 15 minutes!
